What is “borscht”?
Borscht is the national dish of Ukrainians, a symbol of Ukrainian culinary culture and prosperity.
Intergovernmental Committee for the Safeguarding of the Intangible Cultural Heritage, which included representatives of the States Parties to the Convention UNESCOintroduced in 2022 the culture of preparing Ukrainian borscht into the “UNESCO List of Intangible Cultural Heritage in Need of Urgent Safeguarding“under the name Culture of Ukrainian borscht cooking.

Origin of borscht – Ukrainian. According to many experts, It was from Ukraine that borscht spread to different territories and has taken root there so organically that some countries consider it “traditional” for themselves.
Interesting: In the United States, the “borscht belt” refers to the areas where Jewish immigrants from Eastern Europe lived.. In most cases, it can be traced that the Ukrainian lands were the epicenter from which borscht as a dish and cultural phenomenon spread across the “borscht belt.”
In 1584, probably the first mention of Ukrainian borscht in Kyiv was documented in the diary of the German Martin Gruneweg during his visit to Kyiv.
Starting from the 17th century, from Przemysl to Gadyach, borscht is remembered in Ukraine as a familiar dish: references to borscht as a daily and as a holiday dish are found in documents of monks, spudes, Cossacks, peasants, elders of various incomes. Borscht was a universal dish; the ingredients differed, indicating the social status. The tradition of preparing borscht and its various variants covered the entire territory of Ukraine at that time.
Ukraine fought for borscht to be recognized as its national dish, and this was an important step in strengthening the national identity. In Israel, borscht unites Jewish and Ukrainian culture, becoming a bridge of friendship between peoples.
